The imitation crab in supermarket sushi like California rolls is actually surimi, a processed paste made from minced white fish (usually Alaskan pollock) blended with starches, egg whites, sugar, and crab flavoring. She is spot on about the nutritional side. While surimi is more processed and higher in sodium and carbs than pure crab meat, eating it occasionally as part of a sushi roll is totally fine for a balanced diet.
